KDE bigscreen looks perfect for me. I know I have heard of it before but I will need to look a bit more in depth at it.

All I want is Roku, but FOSS, without the ads and tracking.

I would be surprised if that happened. As we learned in the Apple v. Epic case (we all suspected before hand but was confirmed) Apple has kept I message closed so that parents wouldn't "buy cheaper android phones for their kids".

Best alternative to plexamp I've found is Symfonium. It supports plex, jellyfin, subsonic and possibly others.

I've been rocking a first gen X1 Yoga (6th gen intel) for like 5-6 years, three or so of those years I've been using Pop!_OS and its been pretty good. I suspect that a 6th gen intel may be a little lacking for your uses, just to say that most ThinkPads will be good.

Go full plex/jellyfin media server and set up the *arrs to deal with this for you; see wiki here: https://wiki.servarr.com/

I've been using Plex and Jellyfin for a while. Setting up the *arrs is on my list of future projects.
