I would love a potato, however maybe not for breakfast. I almost don't dare to ask, but any alternatives?

Whip clarified peach syrup until it's white, dump a thin layer on a plate and place a peeled apricot half (flat side down) in the center.

At least it'll look like a sunny side up egg, lol.
