The Mexican food with spinach in Texas sure is good. I love enchiladas espinica. For some reason that’s not a thing in New Mexico.

I made this on a whim! Not my usual breakfast offering but wanted something a bit different. I thought about putting spinach in the omelette but it seemed loaded enough. Still went well with it on the side!
Before reading the description, I saw a habañero over spinach and thought maybe I'd been missing out on some odd tradition. Might have to try it now.
I thought that was a simmered habanero too. It’s definitely something I would do.
Oh yeah these were orange cherry tomatoes. Holy cow habanero would’ve been wild 🥵 but I can certainly see why you would’ve thought that! I’m a cherry tomato boy though.
Yeah I had to sneak in a The Curse reference lol
